Raw Material Utilisation

As the Ceres database is fully integrated, it allows all departments to benefit from the same information.

Raw Material Utilisation is an on-going control with two main functions:

Ingredients to be dispensed information is provided in the form of weigh down sheets from the recipe costing files.

Theoretical Usage calculates the standard usage of every ingredient and wrapping material, which is then compared to the actual usage figure.

Actual usage is obtained by the system being “aware of” all goods inwards movements and actual opening and closing stock quantities. Alternatively where all stock is issued to the production departments, these issues can form the basis of the actual usage figures.

Weekly reports show quantities used and differences both in quantity and value terms.

Comparison reports are available with historical weeks to identify trends.
